Grilled Cheese and Tomato Soup- Gourmet Style

Hello again,
We just got back yesterday from moving my sister in to her apartment, so there has been a lack of posting on my part. I was back at the YMCA this morning, ran 2 miles and walked 1. I had some Sweet Frog (frozen yogurt) for lunch with a couple friends and made tomato mozzarella grilled cheese sandwiches to go with tomato basil soup (from a can) for dinner. It was a hit with my family, but I wish I had only eaten half of the sandwich to cut down on the calories. Lesson I need to learn: SELF CONTROL! I know at college I’m going to be surrounded by food calling out to me and I need to learn to be satisfied and say no to food. This was a fairly healthy dinner in my opinion because the soup was only 130 calories and the sandwiches were made with tomato slices and homemade basil pesto on whole grain bread. And a rough recipe:
Tomato Mozzarella Grilled Cheese Sandwiches

A large handful of basil leaves
2 tablespoons olive oil
1/4 cup pine nuts
8 slices whole grain bread
2 Medium tomatoes, sliced
2 cups shredded mozzarella cheese
Margarine, for spreading

Combine the basil, pine nuts, and olive oil in a food processor or blender to make pesto. Spread onto 4 slices of bread. Top pesto with tomato slices and cheese. Top with another piece of bread. Spread margarine on outside pieces of bread and toast on a griddle or grill pan. Serve with tomato soup. Serves 4.
